For protein-loaded paneer roastie: Mix paneer, mashed chickpeas, spices. Shape into patties, fry till crispy. Serve with chutney, coriander
Prep paneer: Cube/slice. Boil potato till soft, peel, and mash
Mix mashed potato, chickpeas, onion, garlic, ginger, green chili, cumin, garam masala, red chili powder, turmeric, chickpea flour, and salt.
Shape mixture, place paneer, enclose, form flat round/oval patty.
Cook roasties: Heat non-stick pan, add oil/ghee. Fry paneer roasties until golden and crispy (3-4 mins per side). Cook multiple at once.
Serve: Transfer roasties to paper-lined plate, garnish with coriander. Serve hot with chutney, dip, and lemon wedges
