8 Big Healthy Dinners For Under $3 Per Serving

1. Grilled Chicken Drumstick

Drumsticks are one of the least expensive cuts of chicken (they usually cost between $1.50 and $2 a pound), but "less expensive" does not mean "less tasty" in this case.

2. Vegan Red Lentil Curry

This red lentil curry is surprisingly easy to make, and it's very creamy because it has both coconut milk and almond butter in it. If you want it to taste even richer, you could easily switch out the almond butter for cashew butter.

3. Slow Cooker Pulled Pork

You can make some pretty tasty sandwiches with pulled pork and whole grain buns. You could also use this recipe to make sweet potato hash, chili, and pulled pork burrito bowls.

4. Summer Vegetable Chili

This meal has a lot of protein because it has both black and pinto beans. It also has a lot of summer vegetables that are cheap and tasty, like zucchini, yellow squash, and fresh corn.

5. Jamaican Jerk Tofu

We don't usually think of Jamaican food and tofu as going well together, but recipe author Andrew Bernard convinced us when he called his mom to help him make the perfect jerk sauce. If mom says it's good, you know it is.

6. Cold Chopped Quinoa Salad with Egg

This cold chopped quinoa salad keeps well, so you can make it ahead of time and serve it straight from the fridge when your guests are ready.

7. Slow Cooker Beef Barbacoa

Brisket is by far the cut of beef that costs the least. Right now, you can buy it for $4 to $5 a pound.  Brisket, like other tough cuts of meat, is best when cooked low and slow. A slow cooker is a great way to do this.

8. Mediterranean Black Lentil Salad

This cold lentil salad is such an elegant dish, and it’s also incredibly versatile, because it’s great served either at room temperature or cold from the fridge.
